Gorgonzola Steak Sauce

This delicious recipe was inspired by CopyMeThat.com. It is a recreation of the famous Gorgonzola sauce featured at The Melting Pot, a fondue restaurant.

Pairing the sharp, salty and intense flavors of blue cheese with steak brings out the best flavors in both. While there are many recipes for blue cheese with steaks, this gorgonzola sauce is smoother and creamier and a better fit for my tastebuds.  Blue cheese and gorgonzola are related, they both have those blue veins running through them. Blue cheese is aged for a minimum of 60 days which gives it the bold flavor many know and love. Gorgonzola, on the other hand, is aged for a longer time, a minimum of 90 days. Aging it longer gives it a softer, creamier texture with more earthy flavorings. Both of these cheeses pair well with many things but the experts agree that pairing them with a juicy grass-fed beef steak is the best.

 

 

Over Labor Day weekend my husband and his friends were working hard to replace our barn roof. It was a lot harder than they anticipated, and that’s usually how those projects go. My friend and I wanted to make the men the best food we could. So while they worked outside from dawn to dusk, we, in turn, worked inside.  We prepared a homemade breakfast, lunch, and dinner each day with the best recipes we could find. On Sunday night we served steak. Not just any steak, we served the best filet mignons, t-bones and porterhouse steaks. I smoked them low and slow and took them off the grill while they were still pink in the middle. They all turned out so tender and juicy. Along with the steaks and sauce, we served twice baked potatoes and asparagus. The meal was a huge success and the men raved about it all night long.

 

 

Gorgonzola Steak Sauce

Prep Time: 40 minutes  – 6 Servings

Ingredients

1/2 cup Mayonnaise

1/2 cup Sour Cream

3 oz. Gorgonzola Cheese – Crumbled

1/8 tsp Salt

1/2 tsp Black Pepper – Freshly ground if possible

1 tsp Chopped Garlic

1 tbsp Sweet Red Wine

1 1/2 tbsp Milk

 

Instructions

  1. Use a fork to crumble Gorgonzola cheese into small pieces.
  2. n a small bowl add: mayonnaise, sour cream, salt, pepper, garlic, wine and milk, stir to combine.
  3. Fold in Gorgonzola cheese crumbles and mix all ingredients together thoroughly.
  4. Refrigerate for 30 minutes to allow flavors to combine.
  5. Serve

This sounds fantastic. I’ve been looking for a good blue cheese recipe since they don’t make a commercial one that’s keto-friendly yet. I’ll definitely give this a try.
