Our Baby Back Ribs are naturally meatier and have less fat than conventional ribs due to the pasture-raised lifestyle of our pigs. The Baby Back Ribs are cut from the top of the loin/rib cage between the spine and spare ribs of the pork. Baby Back Ribs are also known as "Loin Ribs", "Back Ribs" or "Pork Loin Back Ribs". They are thicker and have less fat than Spare Ribs and have meat between and on top of the bones.
Each package contains 1 slab of ribs, approximately 10-13 curved rib bones per slab that will weigh about 2 -3 lbs.
Baby Back Ribs can also be interchanged with Spare Ribs in recipes but are smaller so will need a shorter cooking time. Baby Backs cook up moist and tender and can be seasoned easily with either a dry rub or your favorite sauce. Keep your temperature low and cook them nice and slow to keep your ribs from drying out. Use a meat thermometer to test for desired doneness. Visit our Recipe Corner for Katie's BBQ Ribs made in the Rice Cooker!
Farming Practices
All of our pigs here at John Henry's are fed a mix of non-GMO corn, oats, and alfalfa, and they also love to rut around in the dirt outside looking for more snacks to eat! They are raised locally, and they are never given any hormones or antibiotics. Our fields and feed are never exposed to harsh chemicals or pesticides. Our pigs are pasture-raised and spend their days being outside as much as they wish!
